5 PF 2-501.11: A FOOD ESTABLISHMENT shall have procedures for EMPLOYEES to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the FOOD ESTABLISHMENT. The procedures shall address the specific actions EMPLOYEES must take to minimize the spread of contamination and the exposure of EMPLOYEES, consumers, FOOD, and surfaces to vomitus or fecal matter.
Observed no fact sheet posted for biohazard clean-up but a clean-up kit is in place. - COS (Correct By: Feb 14, 2020)
16 C 4-602.12 (A) (B): (A) The FOOD-CONTACT SURFACES of cooking and baking EQUIPMENT shall be cleaned at least every 24 hours. This section does not apply to hot oil cooking and filtering EQUIPMENT if it is cleaned as specified in Subparagraph 4-602.11(D)(6). (B) The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure.

36 PF 4-203.12: (A) Ambient air and water TEMPERATURE MEASURING DEVICES that are scaled in Celsius or dually scaled in Celsius and Fahrenheit shall be designed to be easily readable and accurate to ±1.5°C in the intended range of use. (B) Ambient air and water TEMPERATURE MEASURING DEVICES that are scaled only in Fahrenheit shall be accurate to ±3°F in the intended range of use.

Observed very thick dust and debris on the McCall stainless condenser and around the top of the unit. Unit also makes very loud noise but is holding temp. Correct and maintain for next routine inspection.
HACCP Topic: CHECKING COOLER TEMPERATURES REGULARLY IS IMPORTANT FOR ENSURING PROPER COLD HOLDING TEMPS BELOW 41 DEGREES.
